I say chalk, but I primarily use felt pens that dispense a liquid paint, and more often than not the work takes place upon a black chalkboard surface, or a surface painted with a chalkboard surface paint. Traditional soft pastel chalk can be used to give shading and depth to the paint when rubbed on afterward, however it does not typically have the longevity of the paint pens.
The paint is often removeable with an ammonia-based cleaner such as Windex, though the degree to which it can be removed depends largely on how rough/porous the surface is. Walls painted black with chalkboard surface tend to be the most stubborn for removal.
Using the durable chalkpaint to create borders and/or logos, allows your in-house staff to make the necessary changes to menus, drink specials, etc... without causing damage to the liquid paint pen art.
